Lune de miel
Lune de miel is a complex blend offered by the Trou du diable at the event “Lauriers de la Gastronomie 2019”. This blend was primarily made of sour beer aged for two years in Banyuls and Cabernet Sauvignon barrels, to which were added brettanomyces and lactobacillus, provoking a second fermentation. It was afterwards mixed with a young saison strongly flavoured with the Miels d’Anicet’s spring honey. Its rich, golden hue and fine bubbles evoke nobility and refinement. On the palate, harmony is first revealed through woody and vinous notes which intertwine with hints of peach and apricot. A smooth and refreshing finish, derived from honey, rounds out the presumption of dryness and acidity.
